Passover Chocolate Bars - Gluten Free

1 cup cashew butter
1/2 cup honey
1/2 cup unrefined coconut oil (Spectrum is certified for Passover by the OU)
2 cups gluten free matzah farfel
1 cup shredded coconut
1/2 cup slivered almonds (blanched of unblanched)
1 1/4 cups parve chocolate chips
1 tsp vanilla


Melt cashew butter, honey and coconut oil over a low flame. Stir continuously. Add chocolate chips and stir until dissolved. Stir in vanilla.

Combine matzah farfel, coconut and almonds. Stir in melted mixture until completely mixed. Spread in a 9x13 pan and refrigerate until firm.  Remove from pan and cut on a board.

I usually make a double recipe because these do not last long. They can be made for all year use with peanut butter and oatmeal if desired.
